Gluten free never...

...tasted so good

Apparently every presidential election year since 1992, Family Circle magazine runs a cookie contest between the two potential First Ladies. This M&M cookie recipe was submitted by Ann Romney and although Michelle Obama won with her White & Dark Chocolate Chip cookies, only 287 votes separated the two women. It was the smallest margin since the contest's inception. But since I don't eat gluten, these get my vote. The only thing I substituted was Bob's Red Mill GF oats to make it truly GF for me.

So, as promised here
photos and the recipe for M&M cookies:

1 cup granulated sugar
1 cup packed light brown sugar
1/2 cup (1 stick) unsalted butter, softened
1 1/2 cups crunchy peanut butter
1 TBSP light corn syrup (such a Karo)
3 eggs
1/2 tsp vanilla extract
4 1/2 cups old-fashioned rolled oats
2 tsps baking soda
6 oz (1 cup) chocolate chips
2/3 cups M&M's candies

1. Heat oven to 325*. In a large mixing bowl, cream sugars, butter, peanut butter & corn syrup on high speed until well combined. Beat in eggs 1 at a time. Beat in vanilla extract.
2. In a separate large bowl, mix together oats & baking soda. Stir in peanut butter mixture until combined. Mix in chocolate chips and the M&M's.
3. Using large cookie scoop, drop dough onto baking sheets, flatten slightly. Bake at 325* for 15-18 minutes or until lightly browned. Cool 2 minutes, then transfer cookies to a wire rack to cool completely.

This is the size cookie scoop I use. I got like 8 dozen cookies!

Got milk?

Happy (gluten free) snapping!

  1. I have GOT to try to make these.
    They sound absolutely yummy.
As always Sis, the shots are spectacular!
    Mwah **hugs**

  2. Beautiful photos, Kelly! Those cookies look absolutely delicious! I'm really craving something sweet tonight :)

  3. Oh yum, sound good and LOOK DELICIOUS!!

  4. Well, unfortunately I'm not doing sugar. But I nay try and substitute.

  5. One of my fondest memories of Kindergarten was the home-made M&M cookies. Over the years I made them - sometimes with oatmeal, sometimes not - always, ALWAYS a favorite. Very enticing photos.

  6. What a great set of food photos Kelly -- I've so fallen off the paleo wagon lately. Only thing saving me is my morning run every day. Go you and your gluten free eating habits! :)

  7. Oh my, these look delicious! And your photos are absolutely stunning. I love the clarity and sharp focus in all the photos!

  8. OMG! Yum! I wish there was a way to download the cookies into my hand! Lol

  9. Mmmmm, those look sooo yummy! (I bought some heart gobstoppers to photograph last week but I'm going to need to buy another bag, oops) I am definitely going to try these!
