Gluten free never...

...tasted so good


Apparently every presidential election year since 1992, Family Circle magazine runs a cookie contest between the two potential First Ladies. This M&M cookie recipe was submitted by Ann Romney and although Michelle Obama won with her White & Dark Chocolate Chip cookies, only 287 votes separated the two women. It was the smallest margin since the contest's inception. But since I don't eat gluten, these get my vote. The only thing I substituted was Bob's Red Mill GF oats to make it truly GF for me.

So, as promised here
photos and the recipe for M&M cookies:

1 cup granulated sugar
1 cup packed light brown sugar
1/2 cup (1 stick) unsalted butter, softened
1 1/2 cups crunchy peanut butter
1 TBSP light corn syrup (such a Karo)
3 eggs
1/2 tsp vanilla extract
4 1/2 cups old-fashioned rolled oats
2 tsps baking soda 
6 oz (1 cup) chocolate chips
2/3 cups M&M's candies

1. Heat oven to 325*. In a large mixing bowl, cream sugars, butter, peanut butter & corn syrup on high speed until well combined. Beat in eggs 1 at a time. Beat in vanilla extract.
2. In a separate large bowl, mix together oats & baking soda. Stir in peanut butter mixture until combined. Mix in chocolate chips and the M&M's.
3. Using large cookie scoop, drop dough onto baking sheets, flatten slightly. Bake at 325* for 15-18 minutes or until lightly browned. Cool 2 minutes, then transfer cookies to a wire rack to cool completely.

This is the size cookie scoop I use. I got like 8 dozen cookies!

  5. One of my fondest memories of Kindergarten was the home-made M&M cookies. Over the years I made them - sometimes with oatmeal, sometimes not - always, ALWAYS a favorite. Very enticing photos.
